Day 25 - Grilled Cheese sandwich with South Indian style Peach preserves (Sandwich)






Canning is not a well known method of preservation in Indian cuisine. Seasonal fruits were often cooked down with plenty of ghee & sugar to remove all moisture and then stored for use. I'd canned a seasons worth of fresh peaches last summer after cooking the fruit puree down. The 'Varatti' as this preserve is called was perfect for a grilled cheese sandwich with some rustic bread and sharp cheddar. Served up with a side of raw banana chips.
