Day 60 - Pleonasmic Edamame Tofu (Beans and Legumes)

A vegan re interpretation of a classic Indian dish - the 'Mutter - Paneer'. and every bit as luxuriously rich.  I did add some cream & yogurt to the mix in the original version, but those ingredients are easily substituted with cashew & Almond milk (the recipe has the details).
