Day 70 - Bruschetta (Italian)


It never fails to amuse me how these little bites are offered up as high end appetizers in many an Italian restaurant in India. The origins of Bruschetta is much more humble. The name itself is a translation of the Italian word 'Bruscare' - to Char. In other words, these bites are simply pieces of bread toasted over a wood fire and topped up with vegetables and cheese of your choice. Whatever topping you choose, ,as long as the crusty bread is grilled almost to a char , you'll have a bruschetta to enjoy.
This particular topping is a simple mix of tomatoes, EVOO, parsley and smoked alderwood salt crystals and some fresh mozzarella. I also rubbed the top surface with a fresh cut clove of garlic.
