Day 75 - Jackfruit pate (Chakkai varatti)
Jackfruit season rolls around and you can spot these huge spiny fruits at Asian grocery stores. They're a challenge to peel and prep, but these fruits simply are one of the best fruits ever to grow on this Earth. They are preserved as a pate in South India and it happens to be one of the signature dishes from teh southern Indian state of Kerala. There are umpteen dishes that use this pate as an ingredient, so stay tuned for those!
