Day 81 - Dulce de leche (one pot)

Forget cooking down milk to the point of caramelization. Food technology already invented condensed milk a 100 years ago thus simplifying the process for home made dulce de leche.

You need just one sealed can of condensed milk. That, and a pressure cooker. I have the 4 liter Indian model. Just pour in 5 cups of water in the pressure cooker container, place the sealed container (I peeled off the label). allow the steam to get generated and cook for 25 minutes on a medium low heat. Allow the cooker to cool down completely before removing the container. DO not open the can until it cools down to room temperature. Its worth the wait, then just open the can & revel in the glory of Dulce de Leche!
