Day 100 -Kerala style Yogurt stew with Mango ('Mampazha Moar Kootan') (South Indian)

This was a specialty at home in India growing up, Amma would set aside the mangoes that were either fibrous or weren't quite perfectly sweet. They went into a delicious Yogurt stew that flooded your palate with an exquisite explosion of flavors, tartness from the yogurt, sweet from the mango, peppered with bursts of smoky & hot fried red arbol chilies, and then there was the tempering of fenugreek seeds that added that touch of bitter, It paired perfectly with steaming hot plain rice of freshly extruded rice noodles (Sevai)
