Day 102 - Simple sauteed potatoes.


When vegetables are in short supply, you can always count on the humble potato to rescue any hearty South Indian lunch or dinner session. this has got to be the easiest version out there. Here's the recipe.

You need:
4 medium sized russet potatoes, peeled and diced into 1 cm cubes
2 tablespoons oil
1 teaspoon black mustard seeds
1 teaspoon cumin
1/4 teaspoon turmeric
1/4 teaspoon paprika
1 pinch asafetida (optional)
salt to taste
your favorite cast iron skillet

Heat the oil till smoking and add the cumin and mustard seeds. Add the potatoes, paprika, turmeric, asafetida & salt. Cover and allow the potatoes to soften for about 10 minutes on a medium high heat. Test by squeezing a piece of potato. If it mashes up after an initial resistance, then remove the lid and allow the potatoes to brown on a high heat. stir and fold the potatoes to ensure that all the pieces get a chance to crisp up. Serve hot with  rice, sambhar or rasam.. , in general this dish pairs well with just about any kind of rice.
