Day 123 - Flaounes (Bread)


This was the most recent bread we made in our baking group. Flaounes is a traditional Cypriot pie that is served during Easter. Usually made with lots of eggs, this was an egg free version. The dough has an unusual exotic fragrance, thanks to the addition of Mahlab ( the powdered seeds of a wild cherry) and the filling is made with tangy ricotta salata,  Greek Kasseri cheese.
