Day 169 - Garbanzo and Peach 'chaat'

Sometimes, one has to think on the go while whipping up a light snack. Classic case in point: my CTO (Chief Tasting Officer, a.k.a the other half - 'G') comes back from work, looks forward to a light snack and a cup of coffee, nothing heavy that would ruin the appetite for dinner - He's way more conscious about eating healthy than I am - I literally grab ingredients from here and there. In this case, a can of garbanzo beans, a peach, 1/2 a shallot and some cilantro mint chutney from the fridge. The 'Puri' (deep fried wheat cracker) is definitely the least healthy ingredient in the dish.  - and purely optional!

You need:
1 can Garbanzo beans rinsed and drained
1/2 a shallot (~ 2 tablespoons) finely diced
1 fresh peach, peeled and diced
1 tablespoon cilantro - mint chutney
juice of 1/2 a lime
chopped cilantro for garnish

Combine all the ingredients (except the cilantro)  together and fold together so that the chutney evenly coats the other ingredients. Spoon out into serving bowls and garnish with Cilantro.
