Day 199 - Roasted Beets with Feta cheese and fried chickpeas



This was a salad I made just to use up some beautiful farm fresh beets I hoarded up on last week.  A combination of Red, golden & chiogga (striped) beets, steamed and marinaded in Ras el Hanout. and then roasted. the sweetness of the beets, the tang of the Feta, the crunchiness of the roasted chickpeas.. It was a perfect add on to supper.
