Jan 14 - Baked Delicata squash Chips


A quintessential one ingredient dish (not counting the salt), but in reality, I like to brush the slices with oil before sprinkling the salt. Delicata is a type of winter squash that quite literally can be peeled like its summer cousin the cucumber. The flesh is soft enough (though crisp) for the vegetable to be sliced thin using a mandolin. Place the slices in a single layer, brush with Olive oil and a sprinkling of salt. Bake at 400 F until the slices turn a golden brown.
