Jan 3 - Moringa leaf Lentil Pancakes

Although practically unheard of in the US of A, the Moringa leaf is a staple produce used commonly all over India. The leaf are tiny, oval, and resemble clover leaves. High in essential nutrients they're often added in stews and curries (especially those involving coconuts).
The Batter for the Lentil pancakes is the traditional 'Adai' mix (Rice, Urad, Mung, Chana, pick and choose the proteins, equal amounts of rice). Just fold in the moringa leaves (which readily fall off the stems they're attached to). and pan fry on a griddle.
