Jan 30 - Victoria Sponge

One of the very few instances where I will actually go out and buy eggs. This recipe for Victoria Sponge that I've been lugging along from the 1980's is from an old baking issue of an Australian magazine, quite obviously endorsed by a local brand of All purpose flour. The cake is an absolute snap to make and is by all accounts a sure fire winner. In other words - A piece of cake!
