Feb 15 - Cabbage Thoran

Simplicity rocks at times, and a stellar example of this adage is the iconic Cabbage thoran / stir fry. When made just right, the dish retains the delectable crunch of the cabbage even as it releases a mild sweetness. a simple tempering of mustard, cumin and arbol chiles is all the spicing that you need. I usually add peas or carrots simply  and  grated coconut for the contrast aspect.
