Feb 24 - Lavender Idlies
Idlies are sacred to the South Indian Diaspora both within and outside India. & justifiably so. I mean, these steamed cakes pack in flavor, texture, health & nutrition in one shot don't they? Of course if you want to add some color to the mix, it becomes non trivial. Adding Beet juice turns it into a shade of dirty rotten tomatoes, spinach puree yields a dull green color reminiscent of green olives left out to rot in brine for a week. and plus it wouldn't quite be idli with all these other ingredients added in, right?
These gorgeous beauties have nothing forbidden added other than rice and urad dal. In fact its just rice, (of the forbidden kind) and lentils. For the recipe, click on the link.
