Mar 20 - Squash and Edamame stew

This was a great comfort food way of dispatching a a bunch of honeynut butternut squashes (yes there IS such a vegetable). These beauties are tiny miniature Hobbit sized butternuts  and you seen them at the Union Square Farmers Markets in fall. They were perfect to be stewed up into a  subzi with frozen edamame and a standard Indian 'tadka' of mustard and cumin.
