Mar 29 - Radiatore Pepperjack Mac n' Cheese
The purpose of the dish was two fold, to induct my new Staub pan into the kitchen and give in to my kids request for home made Mac n' cheese from scratch.
The steps are standard, finely sliced shallots and garlic sauteed in butter, a tablespoon of flour toasted as roue in the mix until brown. Add a cup of milk and allow the mix to form a smooth white sauce. Season and add the shredded cheese (I used a block of Pepper Jack) and allow it to melt. Add the cooked pasta, transfer to a baking dish, top with Bread crumbs (Extra points if you have Panko) and just place it in a 400 F oven until golden brown on top.
