Apr 11 - Winter melon 'Karamudhu'


Winter melon (or ash gourd as its known in India) is one of my favorite vegetables since childhood, I love the texture, the crisp yet juicy bite of the diced cubes. Its traditionally incorporated in Sambars & stews such as kootus,
Given its high water content, its hard to imagine the vegetable stir fried as a 'kari', but here you have it, a dry-ish stir fry spiced up with a nutty blend of toasted dals, coriander & Fenugreek.
