Apr 27 - Chiogga Beets and green Garbanzo stir fry

This would make a beautiful dish for Christmas in terms of its vivid colors.. if only Green Garbanzoswere available in December..(of course there is always the frozen variety).
Chiogga beets , in my opinion are the best of the 4 different types I've seen, they are gorgeous, pink and white concentric rings, they do not bleed crimson, and yet have every bit of the earthy flavor so characteristic of beets.

This was a simple stirfry  with a tempering of mustard,  Urad &  Arbol chiles, and flavored by coconut and curry leaves, healthy, flavorful and downright delicious!
