May 10 - Stuffed Eggplants with Kolhapuri masala

Kolhapur , a city that straddles the border between the Indian states of Maharashtra and Karnataka, is known for its spicy food, especially of the carnivorous kind. they have this fantastic blistering hot spice blend (that needs to be frozen) made with shallots and garlic that perks up any ingredient it comes into contact with.
This was baby eggplants stuffed with a mix of the masala, peanut butter and a touch of toasted chickpea flour. I then fried these veggies to a char on a cast iron skillet. Paired with a Kefir 'kadhi' spiced with the same mix, the end results were deliciously magical
