May 17 - Potatoes with Beet greens
Its so easy to go easy with any fronds of greens attached to a root vegetable. Unfortunately they tend to wilt quite quickly. With this batch of organic beets, I made sure I wasn't going to slack off. Promptly diced up some potatoes sauteed with cumin, turmeric, paprika and garam masala. Once the potatoes begin to brown then just dump the shredded greens and wilt over the potatoes at the bottom of the pan. this way the greens retain their color while the potatoes turn perfectly crispy.
