May 25 - Vadouvan Idly fry
Yesterday's idlies, today's idly fry, thats usually the rule of thumb at home in the (unusual) event that I have leftovers. Left over idlies are versatile, they dry out overnight, resulting in a nice crumbly texture when crushed up. The proteins have seized up nicely and they tend to hold their shape relatively well when stir fried.
I had made a double batch of idly fries during this session, one with Kibbeh (to mimic a Tabbouleh) and the other half I stir fried up with some purple cauliflower and Vadouvan. the green of the spice blend and the purple from the cauliflower made this a visual treat as much as a comforting breakfast.
