Jun 8 - Ragda Patty



Ragda is a beloved Mumbai Street food, and one that can be elegantly scaled up to be served in the 'toniest' of restaurant, one of the best versions I've had was at this Restaurant in London - Mela on Shaftsbury Street.

The patty is almost too ridiculously simple to even be called a proper recipe - just boiled potatoes, salt and Cornflour. The curry/sauce/puree/ gravy, whatever you wish to call it is nothing by dehydrated peas that have been cooked, mushed and flavored with a simple blend of cumin coriander powder. dressed with splashes of green chutney and a sweet date tamarind chutney, this fills you up as a mini meal in the best way possible. and yes, vegan & gluten free to boot!
