June 3 - Stir fried Amaranth Greens with rice noodles
Amaranth greens have a 'ironey' vegetal flavor that is quite unique. Although they tend to ooze liquid, they can still be stirfried and wilted. (in that sense, rather tough like kale). I simply stir fry these with a sesasoning of mustard, urad dal and arbol chiles, when combined with simple rice noodles, they yield a delightful and colorful dish that's a feast for the eyes and the belly.
