Jul 10 - Therattipaal Cannoli
Therattipaal is the precursor to the beloved Dulce de Leche. The original recipe was carried from South India to South America via the Portuguese Catholic trade, from Goa via the Phillipines. (Ref: Rachel Laudan, Cuisine & Empire). The original does not make use of baking soda to retain a smooth creamy texture, instead as the milk evaporates, the fats and the proteins seize up to form soft strands that are essential to the textural experience of the dish.
