Jul 27 - Adai Scramble

Adais are rice and lentil pancake that require no fermentation, just a few hours of pre-soaking and then a run through a blender with spices. They're best had hot like pancakes with powdered natural cane sugar (jaggery / gud) , but if you leave them overnight, they become hard, chewy and it took some extra pan frying scrambled with a bit of oil and a tempering. a dash of lime juice, and a generous pinch of sugar, makes this a delightful breakfast along with a hot mug of coffee.
