Feb 17 - Moringa greens fritters
A fabulous outcome of an experiment that went awry. I was hoping to get a fluffy airy mix (planned to make savory meringues) when I began adding chickpea flour to whipped aquafaba, when the whole lot just COLLAPSED in 10 seconds. Talk about deflated dreams. Literally. Of course I wasn't about to be defeated by deflated aquafaba, so added some spices, salt and a cup of frozen Moringa greens to the mix and folded the whole mix together. When I dropped dollops of the batter into hot oil, I knew I had won this round. Perfect fluffy fritters just asking to be dipped in sweet & Sour Tamarind chutney and savored with a cup of hot tea.
