Apr 19 - Alu Paratha with Kerrygold butter

No surprises here, straightforward WYSIWYG. A classic potato filling spiced with minced ginger & green chilies, cilantro and a spritz of lime juice. The Kerrygold is the proverbial Cherry on top. I indulged int his weekend breakfast after reminiscing about conversations I've had with my late Father. He used to tell me about the Alu Parathas served up at Jubilee Hall at his Alma Mater, the Delhi School of Economics. and the liberal cubes of salted butter that used to be melted on top.. Sometimes memories can be extremely powerful!
