May 16 - Green Tamarind Bamboo rice

One visit to Kalustyans in NYC is enough to give you a fabulous tutorial on almost every ingredient known to the culinary world. I'd been holding on to this bag of green Bamboo rice for quite a while until the right idea for the ingredient struck. I did not want to simply boil it and scarf it up , Being a short grain rice, it would have turned mushy losing all that beautiful sea green shade from the bamboo extract.
Toasted the rice lightly before cooking it and hence ensured that the grains stayed separate. then made a relish using green tamarind and fresh turmeric. added some toasted pumpkin seeds for crunch. A fresh take on the classic South Indian rice dish Puliogare.
