Day 47 - Black Bean soup with Roasted Corn (Mexican)

Mexican food is one area I've not been able to get a full grip on to independently start making from scratch, but I take this project as the perfect opportunity to  learn. It helps that I'm so in love with the flavors of  classic ingredients used in this cuisine.
Today's Sunday lunch was a black bean soup I cobbled up with reconstituted ancho chiles, home canned tomatoes and store bought roasted corn.
