May 31 - Pigeon Pea Sundal

Pigeon Peas or Tuvar dal is a staple in Traditional South Indian Cooking, A legume that actually grows on a  tree rather than an annual creeper. Seasonally, the green immature pods show up in the markets and they're perfect for stir frying.
I added some slivers of tart green mango for an added perk to the flavor.
