I just bought a bag of fingerling trio at Trader Joe's yday! I'm assuming that the recipe for roasting these is the same as what we do for regular aloo. Any differences that I should take into account? Thanks Niv!
nope.. boil the potatoes, peel & proceed as for the regular potatoes. the pink potatoes are much creamier & smoother. the purple ones more earthy, while the white are relatively starchy.. its very interesting in terms of the textures!
Haven't seen purple ones here, but I guess they will make an appearance soon.:) I was wondering about the textures. Was it not conflicting when you made this?

ReplyDelete@sunshinemom: not to the point of one variety disintegrating while the other was semi cooked. they hold up pretty much to the same levels.
