Day 86 - 'Detoured' Stir fried Rice Noodles (rice noodles)

I can't seem to come up with an apt name for what I had for dinner just an hour ago. Its what I call a 'detour' recipe - You start out with the idea of making one thing, and end up switching ideas midstream. I'd added a generous dollop of  peanut butter to shredded coconut with the intention of making stuffed curried eggplants, but that photograph looks nothing like that does it?
