Day 116 - 'Keeth Mangai' (Brined baby mango)
Mangoes don't have to be ripe to be enjoyed, in fact, they don't even have to be fully grown. Only the fittest of the fruit make it to maturity on the tree, the others, a strong wind is enough to shear them off the branches. But, that doesn't mean that they're wasted. The young fruits (about the size of fingerling potatoes) have a blend of tartness and astringent flavor coupled with a crisp crunch. All it requires is a sprinkling of sea salt over the sliced bits, and a good toss. The crisp clean flavors are unbeatable!
