Day 132 - Malvani style stir fried Japanese eggplant
I love the way these soft skinned eggplants absorb the flavors of any spice blend you toss in with them. I used them with a fresh batch of a spice blend that I got from my blogging buddy Anjali Koli of 'Annaparabrahma'.
A simple tempering of mustard seeds & cumin, add the eggplants and the masala, cover and allow the vegetable to soften. After a while add salt and allow the eggplants to acquire a char at the edges. Then, just garnish with chopped cilantro and serve up with hot rice & plain dal. Detailed recipe follows.
