Day 133 - Tricolor carrot relish
My local grocery has begun stocking on bags of lovely organic carrots, Although the header for this post says tricolor, I must have used 5 different colors, the classic orange, purple , yellow, red & white. The relish itself is straight forward and needless to say, the regular carrots work perfectly well
You need:
1 cup carrots, finely diced
1 heaped tablespoons crushed mustard seeds
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (adjust as per taste)
juice of 1 lemon
salt to taste
3 tablespoons oil
Combine all the ingredients, except the lemon juice in a heat proof bowl and fold to combine. Heat the oil until almost smoking. Pour the oil over the carrots and stir well to disperse the fat. Once the
relished has cooled down, stir in the lime juice. Use an accompaniment to rice and dal.
