Day 149 - Masoor dal with Ramps and chives




Remember the ramp bulbs I'd been saving up from the spinach & ramp soup? This was the reason I saved them up for. I love the fact that there are almost countless avatars that a simple pot of cooked Masoor lentils can morph into, and today's dinner was this garlicky simple dal.

You need:
1 cup split red lentils (masoor dal)
1 chopped tomato
1/4 teaspoon turmeric
1 finely minced green chili
10-12 ramp bulbs chopped fine
1/2  bunch chives, chopped fine
1 teaspoon cumin seeds
1 teaspoon whole coriander seed
salt to taste
1 tablespoon ghee or oil

Rinse the lentils until the water runs clear. Boil with 3 cups of water, turmeric and the chopped tomato, until the dal is completely cooked, and then season with salt.
Heat the oil/ ghee in a skillet and add the cumin and coriander seeds once the oil is smoking hot., once they turn color, add the minced chili, ramps and the chives. Saute until the bulbs turn translucent and a wonderful garlicky smell emanates from the pan. Add this fragrant mix into the hot dal and stir it in completely. Serve hot with rice or naans.
