Day 195 - Mint Watermelonade
The key players here are the mint and the watermelon and a hint of heat from a green chilli.. almost a liquid salad, spiced with a touch of salt and pepper and sweetened with honey.
You need:
for the base:
1 cup mint leaves
1/2 a green jalapeno, deseeded
2 -3 cups chilled water
Combine the mint, chile, and a cup of water and puree completely in a smoothie maker. Strain through a fine sieve and dilute with the remaining water.
To make the beverage: (One serving)
juice of 1/2 a lime
1/4 cup watermelon diced finely
2 tablespoons honey
Salt to taste (alternatively rim the glass with salt)
Ice as required
Combine the honey, Lime juice and a cup of the mint extract. Shake well to combine, Pour out into a glass rimmed with salt, top up with the watermelon and ice (if required)
