Day 250 - Farro 'Bhel'
I wanted a healthy filling Farro salad for lunch yesterday but was not inclined towards any of the traditional flavors that I usually rely on, Mediterranean, middle eastern, Italian, As I whittled my way down the list of cuisines, I decided to make it a street food flavor. Quick cooking 10 minute Farro from Trader Joe's, cooked as per instructions, add finely diced tomatoes, cucumbers, onions, a dash of sweet tamarind chutney, chat masala spice blend, a spritz of lime juice, and garnish with some crunchy 'sev' and cilantro. Talk about having my junk food, eating it and feeling good about it too!
