Jan 23 - Kerala Kadala Curry.



Indian food is NOT just Chana Masala, and even if it revolved around the ubiquitous chick pea, there are variations galore depending upon the cuisine from any of the 25+ states you're taking into consideration.
In the southern state of Kerala, Its the Kadala Curry.  The native cousin of the garbanzo - the brown chana - characterized by its leathery brown outer peel, is transformed into a delicious curry flavored with coconut, coriander and curry leaves. Although its traditionally paired with 'Puttu' a steamed mix of toasted rice flour and fresh grated coconut, I have no qualms serving it with the traditional North Indian  flat bread, Roti.
