Jan 29 - Buddha's hand citrus salt


The zest of this unusual citrus has an ethereal aroma that simply begs to be used in anything food. Its ironical that this 'fruit' has no pulp whatsoever, just the peel & pith.  Just peel the zest, dry it in the oven on low heat, and combine with coarse salt in a mortar and pestle, crush until you obtain this fragrant salt that can be used in anything from cocktails to canapes.
