Jan 6 - Quick Pickled Carrots


Carrots - the sky's the limit in terms of the possibilities. Although uncommon, carrots of various shades and colors have begun showing up at local supermarkets and they are a treat to work with. One such quick pickle is a favorite in Delhi households. Carrots cut into sticks blanched and patted dry. Add a teaspoon of crushed mustard, salt, cayenne. Heat up oil (preferably mustard) until smoking hot and pour over the carrots. Squeeze one lime's worth of juice, and you have a tangy spicy quick pickle.
