Feb 9 - Christmas Lima bean Stew (North Indian style)

Sometimes ignorance can be bliss when prepping a dish. I had a bag of these beans sitting for God knows how long. (I have a tendency to hoard unusual ingredients as I see them, especially  when they seem to be those with a long shelf life and even more so, from a Clearance bin). And as luck would have it the label had peeled off a long time ago.
Net result, soaked these  for 3 days , changing the water daily until they hydrated completely and just followed my mother's recipe for the traditional Punjabi favorite Rajma. It was more than a month later that I learned the name of this wonderful legume while shopping at Kalustyan's in New York City.
