Mar 16 - South Indian Style Thuvaiyal with Pea shoots


Not really a great photograph to show case the amazing flavor in this traditional chutney. Ironically the chief ingredient - Pea green shoots does not feature in Traditional Tam Brahm cuisine, in fact its unheard of. That never stopped my mother from having a field day experimenting with unusual ingredients.
A thuvaiyal has a standard formula, toasted pigeon peas, Urad dal, Arbol chiles  coconut and mustard. Add to this just about ANY vegetable sauteed till limp. and by vegetable I include scraps as well, squash peels , discarded stems.. now blend all this along with some salt and a souring agent and Voila, a hummus like spread. How you savor this is entirely up to you.
