Mar 23 - Dill & Grilled Halloumi Pulao with fresh chickpeas
One of those days when you want to clear out your refrigerator and more important, make sure that the leftover Halloumi cheese (precious, since it costs a pretty penny) & green garbanzos you spent an hour shelling don't go to waste. The end result is nevertheless spectacularly delicious and nutritious to boo.
I used plenty of caramelized onions, grilled bits of Halloumi and steamed chickpeas, , used whole spices (Cumin, Cinnamon, cardamom, cloves, peppercorns and bay leaves) tempered in fresh made ghee. All the seasonings, along with the vegetables and grilled cheese were then folded into the cooked and fluffed Basmati rice.
