Mar 26 - Stir fried Ammini Kozhakkattai
Ammini kozhakattai are little morsels of rice dough rolled and steamed. And depending upon your preference, you could either stir fry them with a tempering of mustard & other spices, or boil them in a sweetened mix of creamy milk, sugar & cardamom.
This is one example of a dish that takes longer to make compared to polishing it off. but I seem to have found a very elegant way to get around that. It's unbelievably simple, but using a piping bag makes quick work of the individual rolling and yet, results in these perfect modak shaped morsels as a bonus.
