Mar 9 - Sweet potato stuffed Karela in a Tomato Almond gravy
A lot of Indian dishes fall into that proverbial 'class' of 'You can't have your cake and eat it too' , and this is especially true for the richer creamier dishes that originate from the Punjab region. I came up with this dish as a decadent yet diabetic friendly option, using ingredients that would be approved by the American Diabetic Association. Bitter Melon or Karela as its called in India is known for its anti Diabetic properties (and I say this from a scientific perspective, I did a lab rotation examining these very properties as a grad student at NYU), Sweet potatoes are delightfully low glycemic and just to push the envelope I used Almond meal instead of cream, for a vegan option. Talk about delightfully playing with food.
