Apr 24 - Spelt Flour poories


There really nothing extra special about Poories, puffed flatbreads deep fried in oil, and needless to say, a delicious comfort food. As a test I used Spelt flour  and was blown away by  the textural complexity. The resulting poorie is a darker shade of brown (not because of over frying, mind you) and the robust texture makes it a treat reminiscent of a rustic bygone feast. And its due to the Spelt flour, Spelt is an ancient form of wheat, that was in vogue before the mass scale commercial hybrids took over the planet.
