May 11 - Tomato 'Gothsu'
There's a term in Hindi ' - 'jugaad', best translated as 'cobbled up' I suppose. Its what you do when you have bits and pieces of ingredients that you put together as a last minute side/accompaniment, (It doesn't matter if you already have perfectly delicious alternatives lurking in your pantry, they just don't cut it at the moment). Jugaads come in handy for one pot dishes when the guilt factor of already having made the decision to serve up the family dinner with a single casserole. This was one such dish, tomatoes and nothing else. The secret tho the delicious thick gravy is adding a spoon of garbanzo flour whisked into the juices released from the tomatoes.
