May 30 - Filini Pasta Upma with Green Sorghum
I would categorize Green Sorghum under 'unusual ingredients for sure, For one thing Its a local, seasonal produce available only during the winter months in India, I spotted a frozen version here in the US of A for the first time, Paid a kings ransom for about a cup's worth, but It was well worth it.
Known as Ponk or Hurda in Gujarat & Maharashtra, these grains were a delight to savor tiny, resembling Beluga lentils in size, they have a slight pop when you bite into them. I added this to Upma with plenty of chopped tomatoes!
